From Nonna's Kitchen to Yours
In 1987, Giovanna and Marco Bellini opened the doors to La Tavola Calda with nothing more than a family recipe book, a wood-fired oven, and an unwavering belief that food should bring people together. What started as a tiny 12-seat trattoria in the heart of the neighborhood quickly became a beloved gathering place.
Giovanna's mother — Nonna Lucia — had spent decades perfecting recipes passed down through five generations of Tuscan women. Each dish carried the essence of sun-ripened tomatoes from the hillside gardens, hand-pressed olive oil, and slow-simmered sauces that could only come from hours of patient, loving attention.
Today, La Tavola Calda has grown beyond that first small dining room, but our soul remains unchanged. Every plate that leaves our kitchen carries the same dedication to authenticity and warmth that Nonna Lucia herself would demand.

Chef Alessandro Bellini
Executive Chef & Co-Owner
Alessandro grew up in his parents' kitchen, where the boundaries between play and preparation blurred early. By age eight, he was making fresh tagliatelle alongside his Nonna Lucia. By fourteen, he was inventing his own variations on classic dishes — some brilliant, some memorably disastrous.
After formal training at the Culinary Institute of Florence and stages at Michelin-starred restaurants across Italy and France, Alessandro returned home with a refined technique but an unchanged heart. He took the helm at La Tavola Calda in 2012 and has since elevated the menu while fiercely preserving its soul.
His philosophy is simple: "The best ingredients need the least interference. My job is not to show off — it's to let the food speak for itself."

Honest Cooking
Every morning before dawn, our team visits the local farmers' market to hand-select the day's produce. We forge deep relationships with the people who grow our food — knowing the soil, the season, and the story behind every tomato, every bunch of basil, every wheel of cheese.
Our pasta is made fresh daily using heritage grain flour milled just 20 miles from our kitchen. Our olive oil comes from a single estate in Tuscany, cold-pressed within hours of harvest. Our mozzarella arrives still warm from the dairy. This isn't a marketing claim — it's the only way we know how to cook.
